Fresh off its recent opening, Pullman Singapore Hill Street is thrilled to announce the debut of two new exciting concepts with contrasting personalities to suit different culinary agendas.

Housed within the ground floor, Madison’s is an encapsulation of New York City that serves up beloved deli fare in a railway junction themed setting inspired by Pullman’s historic origins.

Perched atop the roof comes El Chido, a swim-up bar that brings forth coastal Mexico vibes with its escape of inspired cocktails, sharing plates, and an infinity pool to soak up the sun and breeze against a panoramic view of Singapore’s cityscape.

Madison’s

A modern and energetic dining concept embodying the vibrancy of New York City, Madison’s is a day-to-night night restaurant inspired by iconic delis dotted around the big apple. Staying true to its theme, Madison’s is where one can expect generously portioned bagels, sandwiches, burgers and more from breakfast to supper. Anchored by partnerships with sourdough specialists, Starter Lab and celebrated coffee roasters, Sarnies, Madison’s—like the best New York delis—will serve up comfort classics daily for dine-in, delivery and takeaway for a true slice of NYC at the heart of Singapore.

Look forward to American breakfast favorites and deli staples with a twist. Madison’s offers a fabulous list of craft cocktails named after New York City neighborhoods that include Brooklyn for spirituous sips of fig and nutmeg-infused Mitcher’s rye whisky, luxardo maraschino, amaro nonino, Noilly Prat (French vermouth); and Queens, that reflects the cultural hotspot with its tropical tinge of thyme-infused gin, French and Italian vermouth, pineapple and passionfruit.

Passers-by or residents in need of a quick fix can also snatch up coffees using beans, from the local roasted coffee purveyors, at Sarnies’, made by their in-house baristas. Guests may opt to have gourmet sandwiches on-the-go stacked using artisanal breads by Starter Lab Bakery, with options including The Staten Island and The Pullman Pastrami.

El Chido

Against a balmy breeze, stunning views of the twinkling cityscape and a dip in an infinity pool, one can imagine that they are somewhere along Mexico’s Pacific Coast. Replete with a laid-back cocktail in hand, reinvented familiar bites, a backdrop of latino tunes and an infinity pool, the vibe is always effervescent at this rooftop destination.

Named after the Mexican word for “cool”, El Chido is a swim-up bar that brings forth a Mexican theme with creative cocktails by Dario Knox, inspired sharing plates and a calendar of lively pool-side parties for a quick escape without going away.

Cocktails for A Journey Through Mexican Highlands

Complementing its rooftop setting, is a thematic cocktail programme intended to evoke dreamy summer holidays in Mexico. Designed by award-winning mixologist Dario Knox of Knox International Beverage Consulting, the menu spans eight creative signature cocktails that include Cactus Mojito with diced nopales; Coco Rico for a dangerously delicious variant of Pina Colada; and Martini Express with a bright lift of tamarind paste.

Fiesta of Flavours: Sharing Plates at El Chido

In harmony with its Mexican theme, the menu at El Chido carries a selection of inspired plates for convivial gatherings or dates. Appetisers include Elotes with garlicky crema, White Fish Ceviche cured in calamansi marinade. Think an array of tacos, tostadas and tortillas that come in two with choices such as Chicken Peanut Mole for a satay wedged taco hybrid and Tostada options – Grilled Bacon & Quail Egg or Thai Style Angus Beef Flank Steak.

A Day to Night Escape

Capitalizing on its ambiance and pool, El Chido will be open throughout the day till late night to offer visitors the duality of sun-bathing afternoons and spirited evenings. The space is set to be Pullman Singapore Hill Street’s main playground for poolside parties organised in partnership with DJ Dispensary to curate the music direction, alongside themed nights like Taco Tuesdays and Margarita Nights.
